Stuffed eggplant is one of the famous and traditional appetizers in Türkiye. Interestingly, dried eggplants are always hanging on a string in markets and stores. And it is served as an appetizer in Turkish restaurants.
In the old days, some vegetables such as eggplants, tomatoes, and sweet peppers were scarce in the winter, so in the summer, they would empty the inside of the eggplants and hang the eggplants with string to dry. To use this product in winter. Because of this, today, due to its traditional nature, this appetizer is still sustainable and is the focus of many tourists who travel to Turkey to try it.
There are no restrictions for making the middle ingredients of this type of eggplant belly, and you can use any kind of ingredients inside the eggplants.
Fortunately, in Turkey, most stuffed eggplants are vegan, and using the meat inside the eggplant is rare.
Pay attention to another point: Make a little more when making this stuffed eggplant because it is so delicious that it will run out quickly.

Tips and tricks:

  1. You have no restrictions for the middle ingredients of stuffed eggplants; for example, you can use rice or coarse semolina, which I used in this recipe with the ingredients I had in the kitchen.
  2. Be sure to use aromatic vegetables in the middle ingredients because they will be delicious. And it gives a good aroma to stuffed eggplants.
  3. Let the middle ingredients of the eggplants cool down, then fill the inside.
  4. To soften dried eggplants, put them in boiling water for five to ten minutes and check to make sure the eggplants are soft.
  5. After the eggplants are soft, shock them with cold water to stop the cooking process.
  6. When filling the middle ingredients, pour half of the ingredients and collect the sides of the eggplant.
  7. When placing the stuffed eggplants in the pot, use a heavy object on them so they do not open.
  8. You can use tomato paste, garlic, spices, and a little water to prepare eggplant sauce.

I used fine semolina for the middle ingredients of the eggplants, which are prepared faster. Pour a small bowl of semolina into a closed container.
