Directions
Mutabal Eggplant is a Lebanese-Arabic appetizer that I first experienced in an Arabic restaurant in Turkey, and it was delicious. Turkey is very fond of Arabic food.
I was even invited to various parties, and they chose Mutabal Eggplant as an appetizer.
However, in my opinion, Mutabal Eggplant is considered a complete food. Mutabal eggplant is similar to hummus or baba ghanoush, and they usually use condensed yogurt in this appetizer.
Still, I think the tahini added to grilled eggplant is the most important part of making this delicious appetizer. And it doesn’t need yogurt, but you can add it if you have vegan yogurt.
I made this appetizer without yogurt and grilled the eggplants on gas heat. For grilling, make a few holes in the eggplants with a fork or knife so that the inside will absorb the grilled smell. You can also grill the eggplants in the oven.
Tips and tricks:
- Be sure to pierce the eggplants with a fork so that the taste and smell of the eggplants will be more smoky.
- To grill eggplants, you can put them on gas heat or in the oven.
- Adding lemon is optional. I used sour grape juice.
- The most important part of this appetizer is adding tahini. Be sure to add the ratio of eggplant to tahini to the required amount.
- The addition of olive oil helps to soften the texture of the eggplant so that it has a softer texture.
- You can use aromatic vegetables or pomegranate seeds to decorate.
