Cut the skin off Pumpkin and make that into two parts. After that, remove the seeds inside the pumpkin and Cut the pumpkin into 4cm slices.

Heat up 1/2 cup of oil in a large pot over medium heat. Add one chopped onion and 3-4 minced garlic cloves, stirring occasionally until soft and fragrant. Next, add one tablespoon of dried mint and stir for another minute.

Now it's time to add in the star of the show - the pumpkin! Add the pumpkin to the pot with one chopped potato, and chopped sweet chopped tomatoes. Season with one tablespoon of black pepper and one teaspoon of cumin, and stir everything together.
