Are you a busy parent struggling to get your little ones to eat their vegetables? Don’t worry; you’re not alone! As a mom, I understand how challenging it can be to ensure our children get the necessary nutrients, especially when they prefer junk food over fruits and veggies.
That’s why I wanted to share a story about my daughter Mersana and how I managed to get her to enjoy a nutritious breakfast salad even though she usually avoids eating vegetables.

In this post, I’ll share my recipe for a delicious salad with fruits and nuts to make it more appealing to picky kid. Let’s dive in and learn how to prepare a mouthwatering and healthy breakfast salad that your kids will love!

Healthy and Delicious Breakfast Salad for Picky Eaters: A Mom's Recipe🌱VEGi1

My little girl Mersana loves chocolates, chips, fried potatoes, and noodles like many other kids.
Whenever I am not at home, he orders noodles and chocolate for himself. As far as possible, he runs away from fruits and vegetables and looks for non-useful foods!
But as a parent, I want to ensure she gets a healthy and balanced diet. I created this salad recipe that even picky eaters like her will enjoy.

Mersana was eating breakfast of chocolate and french fries at a hotel in Ankara with an open buffet breakfast.
Mersana was eating breakfast of chocolate and french fries at a hotel in Ankara with an open buffet breakfast.

I am trying to change his eating habits and usually make chickpea tofu or sunflower seed tofu or make him eat fruits in the morning!

I want to start today with a great salad, so before he gets too hungry, I sliced him an apple and a banana so he can wait for this wonderful breakfast to be ready!

The key is to mix the vegetables with the foods they love. I chose Mersana’s favorite fruits – avocado and cucumber – and mixed them with sweet red bell peppers, tomatoes, lettuce, and slice olives. I added Mersana’s favorite nuts( some walnuts, hazelnuts, and peanuts) and a sprinkle of sesame, olive oil, and salt to make it more enticing. Mersana loved this salad and even asked for more!
