Start by soaking the sunflower seeds and pumpkin seeds in water for at least 3-4 hours or overnight.
Soaking them will make them super easy to blend so they can release their protein and fat into milk.


Rinse and drain the plump seeds very well. Afterward, my hydrated seeds swelled to almost double


In a blender or food processor, combine the soaked sunflower seeds and pumpkin seeds, lemon juice, salt, inactive dry yeast, garlic (if using), smoked paprika, white vinegar, and 2 pints of water. Blend until you get a smooth and creamy texture.


Mix the agar with 1 glass of water in a small saucepan and heat it over low heat, stirring continuously until it turns into jelly.


Add the blended ingredients mixture to the agar and stir continuously for 5 minutes to ensure it doesn't stick.


Grease a small mold or container with some oil and pour the cheese mixture into it.


Place the mold in the refrigerator for at least 3 hours to allow the cheese or tofu to harden.


After 3 hours, remove the cheese or tofu from the mold and enjoy!
