Mushroom and potato Piroshki is one of the dishes that I made by accident. Usually, without thinking about what to cook, I go straight to the fridge and make a new recipe with the ingredients I have in the fridge. This time, I had a packet of mushrooms. I was thinking of a new recipe while washing and cutting. I thought of making a healthy and delicious dough with potatoes, mixing these sliced mushrooms with my vegetables, roasting them, and putting them in the dough.
And when it was ready, I was surprised by its delicious taste. I even made a cutlet without dough with the left-over Piroshki filling, which was very delicious.
Mushroom piroshki with potato dough is served as an appetizer, but I think it is a complete meal.
You can make this mushroom dumpling at parties and celebrations, and it is very suitable for children who go to school, work and travel.

 

Tips and tricks:

Use fresh mushrooms and allow the mushroom juice to dry completely when roasting the mushrooms.
Use aromatic vegetables of your choice.
Use colored bell peppers.
Let the potatoes be fully cooked to make the dough, then cool and grate. Mix with oat flour and use flax powder to make it sticky and nutritious.
Let the dough rest for an hour
