The best part about Lobiani is that it’s easy to make and can be customized to your own taste. You can add your favorite vegetables and herbs, or switch up the types of mushrooms you use.

You can also make it as a snack or enjoy it as a meal – either way, it’ll be a delicious treat.


1) You can use soaking beans and canned beans in this recipe. Soaking beans is the best choice in this recipe because you can control your seasonings and make special Lobiani.

2) Soak your beans for 8 hours before cooking them. For soaking beans you need a large bowl then cover the beans in the bowl with water to soak them.

3) If you don’t have to soak been for 8 hours and more, you can use a large pot and cool water to make beans ready for Lobiani. Add water to the pot and put it on the stove. When the water in the pot brings to a rolling boil add beans to the water and boil them for 15 minutes.

4) For active dry yeast you need boiled water at 40°C. Add dry yeast to boiled water and wait 15-20 minutes for the yeast to activate and begin to foam up.

15 minutes

ready onion for Lobiani

Take a pan and put it on the stove. Then add oil and chopped onion. Fry onion in the oil until changes color to light brown.

20 minutes

blend soaking / cooked bean

Drain the beans water and add them to the blender. Then blend the bean to be soft. After that add beans and spicy to fry the onion.

Take a glass or cup to ready yeast. Add warm milk, yeast, and a little sugar to a cup and wait to ready foamy yeast.

50 minutes

make Lobiani dough

In this step, you need one large bowl to make Lobiani dough. Add foamy yeast, flour, Salt, and water to the bowl. Then mixed ingredients for 2-3 minutes. After that add dough to another bowl and cover the bowl with plastic wrap. Set the bowl in a warm place for 50 minutes until the dough doubled in size.

Use a knife to divide the dough into two equal pieces. Add some oil to the Baking tray, then roll out one part of the dough into the tray. Place a d bean filling into the center of the dough.

In this step roll out another part of the dough on a work surface with using a rolling pin. Then cover the first part of the dough with this part and Pleat and pinch the round dough.

Baking Lobiani

Heating the oven to 170°C and adding a Baking tray to the oven for ready Georgian Lobiani.

Then serve this delicious traditional food with your favorite sauce and enjoy that.
